Hey guys!

So I deeply apologize for the lack of posts these last couple weeks. June is always a very busy month for me, and I really like to take a substantial amount of time to put together these posts, rather than just throw them together quickly just to get them out. As promiced, there will be a ton of really cool posts throughout the summer months, so remember to stay tuned!

Today I thought I would share a little recipe. It’s really delicious and I actually made it this morning. This should turn out as a delicious little coffee cake to have as a fun treat or dessert.

Apple Squares
what you need
– 3/4 c. & 1 T. Sugar
– 1 egg
– 1&1/2 c. Flour
– 1/2 t. Salt
– 1 peeled and 1 chopped apple
– 1/2 c. Oil
– 1/2 t. Vanilla extract
– 1/2 t. Baking soda
– 1/4 t. Cinnamon
directions
in a large mixing bowl…
1.) add sugar
2.) add oil
3.) add egg
4.) add vanilla
5.) mix and set aside
in a medium mixing bowl…
6.) add flour
7.) add baking soda
8.) add salt
9.) add cinnamon
10.) add dry ingredients to large bowl and mix
(DO NOT OVERMIX! If dry, add a little bit of water)
11.) peel, core, and chop the apples and add them to the batter
12.) mix until well blended
13.) spread into greased 8×8 glass pan and bake for 25 minutes at 375°
* the top should be brownish and crispy at the edges. If it does not appear fully baked after the 25 minutes, leave it in for a few minutes more.
14.) let cool
15.) serve as is or with icing on top!
